Penelope "Penny" S. (Mullinnex) Darling, passed on in peace, at home, on January 1st, 2024. Penny was born in Delhi, NY to Raphael and Katherine (Simmons) Mullinnex on December 7th, 1945. She spent her childhood on the family farm in Franklin, NY and graduated from Franklin Central School. It was here that Penny developed her compassionate and limitless loving heart and her warrior spirit and grit. In adult life Penny proved her work ethic and dedication to her family was and would be her ultimate purpose. She also collected co-workers and friends along the way into her circle. Penny was always providing love and compassion to everyone that she encountered.
July 10th, 1993, Penny married her sweetheart, Theodore "Ted" A. Darling of Hancock, NY and together they connect the two families in love.
In Penny's later adult life, her true warrior spirit and grit became apparent. Penny conquered and won several life battles as an18-year survivor of a double lung transplant and a 6-year kidney transplant survivor from a living donor. Penny's remarkable spirit and desire to conquer all odds will continue with her legacy.
Penny is survived by her husband and the love of her life, Ted Darling, Hancock, NY and a sister, Mary Katherine Finnegan, Supply, NC.
Penny is also survived by her children and her purpose for life; her sons; Rich (Joanne) Carman, Charlotte, NC, Eric (Karen) Gilbertson, Otego, NY, Tod (Dawn) Darling, Endwell, NY, and Jim (Jenn) Darling, Neversink, NY. One daughter; Lucinda (Wayland) Rider, Masonville, NY, and a daughter in law, Kim Gilbertson, West Oneonta, NY.
Penny is also survived by her grandchildren and the lights of her life. Joseph Smith, Upland, IN, Christopher Gilbertson, Morris, NY, Austin Gilbertson, Otego, NY, Mckenna Gilbertson, Otego, NY, TJ Darling, Johnson City, NY, Tod Smith, Wilmington, OH, Seth Darling, Winter Park, CO, Kailey Darling, Endicott, NY, Jayden Siegler, Neversink, NY, Billy Siegler, Neversink, NY, and Kadence Rider, Masonville, NY.
The final piece of Penny's tribe is her three great grandchildren: Jacob Smith, Upland, IN, Sophia Darling, Endicott, NY, and Jackson Blakeney, Endicott, NY.
Penny is also survived by a special friend, Jim Trago, Hancock, NY. It was through their friendship that Jim also became an honorary family member. Jim became an instrumental part of Penny's life by giving her the greatest gift, the gift of life. Through living organ donation from Jim, Penny received a kidney transplant.
Penny also leaves several nieces, nephews, cousins, aunts, uncles, and close friends that she kept close to her heart. Finally, she is survived by a very special furry child that was a constant companion, Rocky.
Penny was predeceased by several large pieces of her abundant heart. She was welcomed with loving and graceful arms into eternity by her parents; Raphael and Katherine (Simmons) Mullinnex, and her brother Dallas Mullinnex. Also, by two large pieces of her heart, her children, daughter Denise Mullinnex and son Roger Gilbertson.
Per the wishes of Penny, there will be no formal funeral service but rather a celebration of life to be held in the spring.
The family would also request in lieu of flowers, please consider organ donation and living organ donations. Due to the advancements of medicine and the miracles granted to the family, they were given a winning lottery ticket, one that paid for almost two decades of life for Penny.
